A warm and sunny region temperatures are moderated by the cooling effect of the onshore breezes (hence the name of this wine). Soils are a mix of clay and limestone with some marl and sandstone. Hand harvested grapes are fermented with a mix of pressed and whole clusters, with a 72-hour presoak. Each variety is fermented separately. The Bourboulenc is cool fermentation in stainless steel is followed aging on fine lees for 4-6 months. The Roussanne is barrel fermented and aged in used oak casks prior to the final blending.

Situated in the village of Fleury d’Aude, right on the Mediterranean coast in the region of La Clape, Château de la Négly today has 25 hectares planted under vine. An old estate from the early 19th Century the modern era began when owners Jean Paux-Rosset and his wife Claude took over the estate in 1990. Working with their son Bastien and daughter Marion, and consultant oenologist Claude Gros, they produce sustainably grown and made red and white wines from low yielding, old vines.

This is a medium bodied and textural white wine with bold stone fruit nose and palate – even a touch of pineapple. There’s a pleasant saline note with a fine vein of acidity.
