Adelaide Hills – a key cool climate region in South Australia. Shaw & Smith own 3 vineyards in Balhannah, Lenswood, and Piccadilly totalling 59 hectares, planted in 1999 and now in the process of becoming fully organic. The Pinot is predominantly from Lenswood.
Grape variety:
100% Pinot Noir, 20% fermented as whole bunches; matured for a year in French oak puncheons (twice the size of normal barriques) with very little new wood used.
Producer:
Michael Hill Smith MW and Martin Shaw were true pioneers of modern, fresh, elegant Aussie wines.
