Although the production of the wine remains highly regulated and – in many cases “traditional” – it has managed to engineer a level of freshness and appeal by subtle marketing and careful adaptations to styles without any compromise with quality.

Seafood paella with king prawns, mussels, monkfish and squid
Main:
Braised and rolled shoulder of lamb with parmesan and mint croquette, glazed carrots,
roasted green beans and minted jus
To finish:
Tocino de Cielo (crème caramel) with caramelised blood orange and blood orange sorbet
